Description

Not everybody loves papaya. But when everybody tries this jam, they can’t believe it’s made with papaya that they just keep savoring it on their toasted bread.

Now let’s jam on!

Ingredients

5 c
very ripe papaya puree (fresh, not canned)
3 c
very ripe pineapple puree (fresh, not canned)
4 1⁄2 c
granulated sugar
1 1⁄2 c
Kalamansi or lemon juice
1 t
cinnamon powder
1⁄2 t
ginger powder
1⁄4 t
ground nutmeg

zest of 2 lemons (optional)

Instructions

Mix all the ingredients but the lemon zest in a medium sauce pan or any thick pot. Heat over low-medium heat, occasionally stirring on the first 20 minutes (every 3-5 minutes).

Add lemon zest after 20 minutes, then continue cooking on low heat for 20 or more minutes, until the jam is no longer runny or watery (thicker consistency). At this stage, you should be constantly stirring your jam. Do not leave it unattended.

Bottling your jams using water bath canning. I used this guide from wikihow guide: https://www.wikihow.com/Sterilize-Bottles-and-Jars-for-Canning
