Shrimp and Cheesy Grits Recipe: A Cheesy Affair

Whenever there is something cheesy, my husband and daughter would love it easy.

Description

I used to cook this in the US, and is an everyday favorite. There are some restaurants that serve this, but why go to one when homemade is one better?

My husband’s conclusion? Very Delicious. And I, for once was very delighted.

Ingredients

 
CHEESY GRITS
1 c
corn grits (or ground corn)
2 c
cheddar cheese, grated
1
bouillon cube or a teaspoon granulated bouillon or seasoned salt to taste

water
  oz
CREAMY SHRIMP SAUCE

medium-sized shrimps, peeled and deveined
 
seasoned salt to taste
1 t
lemon juice
2 t
olive oil
3 T
butter
1 c
All purpose cream or heavy cream
1 T
finely chopped garlic
1 c
red onion, diced
1⁄4 c
dry white wine
 
green onions or parsley (chopped) to garnish, optional
 
paprika sprinkles to garnish, optional

Instructions

Cheesy Grits

Boil 4 cups of water with bouillon or seasoned salt to taste.
 
When boiled, gradually pour in corn grits with one hand while the other hand whisks corn grits in water. Keeps stirring until corn grits absorbed the water and has thicken a lot. Depending on what kind of corn grits you are using, stirring may take about 10 minutes. Add in butter and continue mixing until butter is all melted and mixed well with the grits. Turn off heat and add the cheese, stirring until it is all melted and well mixed with the grits. Keep warm inside a warmed oven while preparing for the rest of the ingredients.
 
Creamy Shrimp Sauce
 
Cooking the shrimp. This has 2 options. I like them grilled over charcoal better because of the smoky flavor it will have.
 
Option 1:   Grilling the shrimp.
 
Preheat the grill (charcoal or electric) to medium-high.
 
Season shrimp with seasoned salt and mix in olive oil and lemon juice. 
 
Grill the shrimps just until both sides are pink.
 
Set aside/keep warm together beside the cooked grits (do not mix with the grits).
 
Option 2:   Sautéing the shrimp.
 
Season shrimp with seasoned salt, and mix in lemon juice.
 
Heat oil over medium heat. When hot but not smoking, add in shrimp and sauté until just pink. Seat aside/keep warm together beside the cooked grits (do not mix with the grits).
 
Preparing the Cream
 
Heat butter in a small saucepan over medium heat. When melted, add in garlic and sauté until golden brown. Then add in onions until translucent. At this point, pour in wine. Let simmer, occasionally stirring until most liquid has evaporated.
 
Add in cream and season with seasoned salt. Simmer constantly stirring until sauce has thickened, about 10-15 minutes. The sauce doesn’t need to become very thick, as this may not happen! It will thicken a little bit.
 
Mix in cooked shrimp.
 
Remove from heat, and garnish with green onions or parsley.
 
Preparing the Shrimp and Cheesy Grits
 
Ladle about a cup of cooked grits onto your plate, then top with creamy shrimp sauce.
 
Sprinkle with ground paprika as desired and more spring onions and parsley.
 
Savor!
