Chopped Vegetable Salad Recipe

Description

One of my favorite ways in devouring veggies is serving it chopped just like this. I can devour this with or without a sauce. If you do use sauce, make sure it is of healthy ingredients as well so as not to break the chain of a healthy diet.

The measurement of ingredients for this recipe is “lawless”, which means, however you want it.

Here is how it goes, and remember: Each of the following must be chopped!

Ingredients

1 c
green leafy vegetables like spinach or your favorite lettuce with a mix of arugula
1⁄4 c
parsley, fresh
1⁄4 c
basil, fresh
1 c
jicama
1⁄2 c
carrots
1⁄3 c
red onion
1⁄2 c
craisins (dried cranberry)
1⁄2 c
Spanish-style peanuts without skin or any roasted nuts you want
1⁄2 c
· fatless and cooked chicken breast/fillet
1 c
fresh crimini mushrooms

Instructions

Mix all the ingredients and dress with your favorite salad sauce.
 
Have fun. Be healthy!
 
Great for taking to the office as a healthy and refreshing lunch. Just keep refrigerated until ready to savor.

Note:  If you are a vegan or vegetarian, no need to add chicken.  The salad always tastes good.
