Artichokes are a part of my family's diet. For the kids, I always buy the baby artichoke hearts or center that can be found at the frozen products section of my local grocery store. When preparing the artichokes, I also find it helpful leaving them submerged in water with freshly squeezed lemon juice just to keep them from turning dark before I could cook them.
