The Apple Bread Story: A Whole-Wheat Apple Bread Recipe

Description

“Mommy, where is the batter you promised me? Here are my ingredients. Please make me a batter.” My daughter begged.

“What for?” I asked.

“Uhm, a bread?”

“Banana Bread?”

“Uhmmm…” She replied with mind full of thoughts on what kind of bread to bake that day. Then her eyes met 2 green apples – Granny Smith apples.

“That one!” She pointed out with excitement.

“You want it with banana?” I suggested.

“Nope, just apple,” She replied.

“Ok, apple then. We need to modify your ingredients to suit to our apple bread.”

“Ok…..” She agreed with excitement, and waited….

Now here are the ingredients:

Ingredients

1⁄2 c
homemade coconut butter (or coconut oil or the real butter)
1⁄2 c
brown sugar, plus 1 T for topping
1⁄4 c
homemade mango jam
1 t
baking soda
1 t
vanilla
1⁄4 t
sea salt
1 t
ground cinnamon
1⁄2 t
ground cloves
1⁄4 t
nutmeg
2
eggs, large
2 c
whole-wheat flour
2 c
granny smith apples, unpeeled, cored and diced

Instructions

Preheat oven to 170 deg Celsius.
 
“Can I mix the batter?” My daughter continued.
 
“Yes love, but not until I mixed the following ingredients in the food processor:”
 
Note: You can also use a hand mixer if no food processor, or manually with a whisk.
 
Blend together the first 9 ingredients for about 4 seconds. Then add eggs one at a time, beating or blending each time.
 
Place 2 c whole-wheat flour in a separate bowl.
 
Pour in the batter and gently mix using a wooden spatula.
 
“Okay mommy, let me do it!”
 
“Gently panengneng.” Panengneng is one endearment I call my daughter.
 
Do not over mix the batter. Fold in prepared apples and pour on a buttered or oiled inside part of a baking dish. Sprinkle evenly with brown sugar.
 
“Please use the round baking dish mommy.” And so we did! Use any shape of baking dish you want. Life is too short to be serious!
 
Bake for 50-60 minutes, or until a stick comes out clean. This, I mean poke the bread with a barbecue stick or a knife all the way to the bottom. If it comes out clean, it’s already done.
 
Ahhh…. Goodness yes… she had this for lunch and dinner. Will you?
